Butternut Squash Slaw

Last night we went out to dinner and they served a butternut squash slaw. I was thrilled to death. It was light and fresh tasting with a hint of spiciness. I had never thought of eating butternut squash raw. I was great.

The slaw reminded me of a recipe I make using carrots. In my recipe I use grated carrots, cranberries, crushed pineapple with the juice and a squeeze of either orange or lime. So simple and so delicious!

So I started thinking, what if I combined the two. Grated butternut squash, carrots, even granny smith apples all tossed together with the pineapple citrus dressing. All that crunchy goodness with the sweet taste. I like the hint of spiciness so I wonder what it would be like if you finely chopped some jalapeños into the mixture.

I think this will need to be on the shopping list for this week. I would love to know if anyone else had ever had butternut squash slaw before. What do you think of my ideas of making it home?
